It obviously comes down the the producer and skirting, doesn't it? I
had a white boy with amazing white fleece, and he had a quarter sized
maroon spot on his shoulder. It was easier to skirt out that white spot
than to skirt all around the edges of the apron and belly, let me tell
you. Removing the "hairy" fiber is of the utmost importance when
processing on any scale.

And whether on large, commercial scale, or small cottage scale, the
skirting will always have to be done. I still see the occasional spot
as a non-issue.
