This is the perfect time to plant grass! Hire it done if you can, the alpacas will graze down the alfalfa and kill it if you have enough alpacas for the acreage, otherwise you may want to turn it under before you plant your grass. Since winter is fast approaching, can you dry lot the alpacas with hay while you renovate the pastures to be ready for them in the spring??
The tilled in alfalfa will be an excellent source of nitrogen for the new grass and you won't kill it all, so it will still be there to fix nitrogen for the new grass and protein for the alpacas. I would be very cautious turning them out on such rich pasture.
Don't forget to take advantage of your extension agents, they can be a tremendous help.
