Has your vet checked out the animals she injured? If so, there is at
least a record of the injuries that your vet could provide an
official statement in support of your claim.

Well it wouldn't be "my word/her word" since not only did the woman
with her confirm to me that she indeed heard me ask for the least
expensive cut, but also heard me remind the shearer of that during the
first cut. No, my vet never came out, she has made it clear on many
occasions she is not interested in working with camelids, plus she was
out of town. But she does know what happened due to my calling her to
come stitch up the cut. Plus the shearer has acknowledged in email
that she cut my boy pretty badly and how bad she felt about it.
